Combine the kale, almonds, apple and Cheddar in a large bowl.<br \/>\n<\/span><span style=\"font-weight: 300;\">2. Whisk together the lemon juice, salt, garlic and olive oil. Add to the salad, and toss well. Sprinkle the Parmesan over the top, and serve.<\/span><br \/>\n<strong>Tip <\/strong><br \/>\n\u2022 Advance preparation: This salad benefits from tossing with the dressing about 15 minutes before you serve it. Peel the beets and the shallot. Combine them in the bowl of a food processor fitted with the metal blade, and pulse carefully until the beets are shredded; do not puree. (Or grate the beets by hand and mince the shallots; combine.) Scrape into a bowl.<br \/>\n2. Toss with the salt, pepper, mustard, oil and vinegar. Taste, and adjust seasoning.
