{"id":16541,"date":"2016-05-22T16:36:23","date_gmt":"2016-05-22T23:36:23","guid":{"rendered":"https:\/\/landing-uat.thedolcediet.com\/blog\/?p=16541"},"modified":"2021-07-19T07:06:28","modified_gmt":"2021-07-19T07:06:28","slug":"quinoa-crockpot-recipes","status":"publish","type":"post","link":"https:\/\/landing-uat.thedolcediet.com\/blog\/quinoa-crockpot-recipes\/","title":{"rendered":"Quinoa Crockpot Recipes"},"content":{"rendered":"<h2>Quinoa Crockpot Recipes<\/h2>\n<h4>by Samantha Coogan, MS, RDN, LD<\/h4>\n<h3>Quinoa Primavera<\/h3>\n<p>Ingredients<br \/>\n\u2022\t1\u00bd cups quinoa, uncooked<br \/>\n\u2022\t1 lb. boneless skinless chicken breasts<br \/>\n\u2022\t4 cups + 3 cups chicken broth<br \/>\n\u2022\t4-6 cloves garlic<br \/>\n\u2022\tSalt and pepper<br \/>\nBefore serving:<br \/>\n\u2022\t1 tbsp. grapeseed oil<br \/>\n\u2022\t1 bunch asparagus, cut into bite sized pieces<br \/>\n\u2022\t6 oz. pesto<br \/>\n\u2022\tSqueeze of lemon juice<br \/>\n\u2022\tWatercress, fresh parsley, chives, or any other herbs for topping<br \/>\n\u2022\tParmesan cheese for topping<br \/>\nDirections<br \/>\n\u2022\tRinse the quinoa.<br \/>\n\u2022\tYou can either cut the chicken or leave in there as whole breasts.<br \/>\n\u2022\tPlace the quinoa, chicken, 4 cups broth, garlic, and a sprinkle of salt and pepper and seasonings in the crockpot. Cover and cook on LOW for 3-4 hours.<br \/>\n\u2022\tWhen the quinoa and chicken are done, the mixture should be very thick and sticky.<br \/>\n\u2022\tAdd the remaining 3 cups broth or water and stir to combine.<br \/>\n\u2022\tStir in the pesto and lemon juice and cover to heat through.<br \/>\n\u2022\tHeat the oil in a skillet &#8211; add the asparagus and saut\u00e9 for 5-10 minutes, until the asparagus is lightly browned and tender-crisp.<br \/>\n\u2022\tAdd the asparagus back to the crockpot and stir to combine.<br \/>\n\u2022\tTop each serving with fresh herbs, shredded cheese, watercress, olive oil, or anything else you want.<br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"\/blog\/wp-content\/uploads\/2015\/10\/blog-divider-line.jpg\" alt=\"blog-divider-line\" width=\"620\" height=\"60\" class=\"aligncenter size-full wp-image-15477\" srcset=\"https:\/\/landing-uat.thedolcediet.com\/blog\/wp-content\/uploads\/2015\/10\/blog-divider-line.jpg 620w, https:\/\/landing-uat.thedolcediet.com\/blog\/wp-content\/uploads\/2015\/10\/blog-divider-line-300x29.jpg 300w\" sizes=\"auto, (max-width: 620px) 100vw, 620px\" \/><\/p>\n<h3>Quinoa Tacos<\/h3>\n<p>Ingredients<br \/>\n\u2022\t1 cup quinoa<br \/>\n\u2022\t1 cup low-sodium vegetable broth<br \/>\n\u2022\t2 cans (15 ounces each) black beans, drained and rinsed<br \/>\n\u2022\t1 can (14.5 ounces) diced tomatoes in tomato juice<br \/>\n\u2022\t1 can (10 ounces) organic enchilada sauce<br \/>\n\u2022\t1 packet low-sodium taco seasoning<br \/>\n\u2022\tSprouted grain wraps\/tortillas<br \/>\n\u2022\tOptional: cheese fresco cheese, diced avocado, cilantro, fresh lime<br \/>\nDirections<br \/>\n\u2022\tRinse the quinoa.<br \/>\n\u2022\tIn a large crockpot, add in the quinoa, vegetable broth, black beans, undrained diced tomatoes, enchilada sauce, and packet of taco seasoning.<br \/>\n\u2022\tStir.
