You can serve these over brown rice pasta, quinoa or rice!<br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"\/blog\/wp-content\/uploads\/2015\/10\/blog-divider-line.jpg\" alt=\"blog-divider-line\" width=\"620\" height=\"60\" class=\"aligncenter size-full wp-image-15477\" srcset=\"https:\/\/landing-uat.thedolcediet.com\/blog\/wp-content\/uploads\/2015\/10\/blog-divider-line.jpg 620w, https:\/\/landing-uat.thedolcediet.com\/blog\/wp-content\/uploads\/2015\/10\/blog-divider-line-300x29.jpg 300w\" sizes=\"auto, (max-width: 620px) 100vw, 620px\" \/><\/p>\n<h3>Buffalo Chicken &amp; Quinoa Meatballs<\/h3>\n<p>Makes about 36 small meatballs<br \/>\nIngredients<br \/>\n\u2022\t2 lbs. 95% lean ground chicken<br \/>\n\u2022\t\u00be cup cooked quinoa<br \/>\n\u2022\t1 carrot, minced<br \/>\n\u2022\t1 celery rib, minced<br \/>\n\u2022\t1 large egg, lightly beaten<br \/>\n\u2022\t1 tsp. garlic powder<br \/>\n\u2022\t1 tsp. onion powder<br \/>\n\u2022\t1\/2 tsp. salt<br \/>\n\u2022\t1\/2 tsp. pepper<br \/>\n\u2022\t1.5 cups buffalo sauce<br \/>\nDirections<br \/>\n1.\tPreheat oven to 400 degrees.<br \/>\n2.\tMix together all the ingredients except the buffalo sauce until just combined.<br \/>\n3.\tRoll into meatballs. Place onto a baking sheet sprayed coated with coconut or grapeseed oil.<br \/>\n4.\tBake for 5-7 minutes until just browned on the outside.<br \/>\n5.\tSet up slow cooker and pour \u00bd cup buffalo sauce into the slow cooker.<br \/>\n6.\tAdd the meatballs. Pour into remaining buffalo sauce over the meatballs. Sriracha, or more, to taste<br \/>\n\u2022\tSea salt and freshly ground black pepper, to taste<br \/>\n\u2022\tSesame seeds, for garnish<br \/>\nFor the sauce<br \/>\n\u2022\t\u00bc cup low-sodium soy sauce<br \/>\n\u2022\t2 tbsp. rice vinegar<br \/>\n\u2022\t1 tbsp. freshly grated ginger<br \/>\n\u2022\t1 tbsp. brown sugar, packed<br \/>\n\u2022\t1 tsp. sesame oil<br \/>\n\u2022\t1 tsp. Sriracha, or more, to taste<br \/>\n\u2022\t4 tsp. whole wheat flour<br \/>\nDirections<br \/>\n1.\tPreheat oven to 400 degrees F.<br \/>\n2.\tLightly coat a 9 x 13 baking dish with coconut or grapeseed oil.<br \/>\n3.\tIn a large bowl, combine ground turkey, quinoa, garlic, onions, egg, soy sauce, sesame oil, Sriracha, salt and pepper, to taste. Stir until well combined.<br \/>\n4.\tRoll the mixture into 1 1\/4-to-1 1\/2-inch meatballs, forming about 18-20 meatballs.<br \/>\n5.\tPlace meatballs onto the prepared baking dish and bake for 18-20 minutes, or until all sides are browned and meatballs are cooked through.<br \/>\n6.\tTo make the sauce, whisk together soy sauce, rice vinegar, ginger, sugar, sesame oil, Sriracha and \u00bd cup water in a small saucepan over medium high heat.<br \/>\n7.\tIn a small bowl, whisk together flour and 1 tablespoon water.
