Bake 45-60 minutes, depending on the size of the potato.<br \/>\n3.\tOnce cooled, carefully slice open top of potato and scoop out flesh into a small bowl.<br \/>\n4.\tPlace potato shell onto small baking dish or cookie sheet.<br \/>\n5.\tTo the potato flesh, add ricotta cheese, spices, maple syrup and mix until well combined. Taste and adjust spices as necessary.<br \/>\n6.\tCarefully spoon mixture back into potato shell and reheat in oven until warmed through, about 10 minutes.<br \/>\n7.\tWhile sweet potato is reheating, toast pecans in dry saut\u00e9 pan.
