Here are just a few that we have up our sleeves!<\/p>\n<h3>Pumpkin Spice Breakfast Cookies<br \/>\nMakes 12 cookies<\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-15545\" src=\"\/blog\/wp-content\/uploads\/2015\/11\/pumpkin-spice-breakfast-cookies-300x179.jpg\" alt=\"pumpkin-spice-breakfast-cookies\" width=\"300\" height=\"179\"><br \/>\nIngredients<br \/>\n\u2022 \u00bc cup coconut oil, melted<br \/>\n\u2022 \u00bc cup honey<br \/>\n\u2022 1 cup rolled oats<br \/>\n\u2022 1 cup quick cooking oats<br \/>\n\u2022 \u2154 cup dried cranberries<br \/>\n\u2022 \u2154 cup pumpkin seeds<br \/>\n\u2022 \u00bc cup ground flax<br \/>\n\u2022 1 tsp. pumpkin pie spice<br \/>\n\u2022 \u00bd tsp. salt<br \/>\n\u2022 \u00bd cup pumpkin puree<br \/>\n\u2022 2 eggs, beaten<br \/>\nDirections<br \/>\n1. Preheat oven to 325 F.<br \/>\n2. In a small bowl warm coconut oil and honey (either inside preheating oven or on the stove top).<br \/>\n3. In a large bowl combine both oats, cranberries, pumpkin seeds, ground flax, pumpkin pie spice and salt. Add pumpkin puree, eggs and warmed coconut oil and honey. Stir until fully combined.<br \/>\n4. Drop about \u00bc cup sized scoops of the mixture onto a cookie sheet and flatten with back of a greased spoon. Bake for about 15-20 minutes until edges are lightly browned.<br \/>\n5. Let cookies cool on baking sheet.<br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-15477\" src=\"\/blog\/wp-content\/uploads\/2015\/10\/blog-divider-line.jpg\" alt=\"blog-divider-line\" width=\"620\" height=\"60\" srcset=\"https:\/\/landing-uat.thedolcediet.com\/blog\/wp-content\/uploads\/2015\/10\/blog-divider-line.jpg 620w, https:\/\/landing-uat.thedolcediet.com\/blog\/wp-content\/uploads\/2015\/10\/blog-divider-line-300x29.jpg 300w\" sizes=\"auto, (max-width: 620px) 100vw, 620px\" \/><\/p>\n<h3>Pumpkin Bread<\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-15547\" src=\"\/blog\/wp-content\/uploads\/2015\/11\/pumpkin-bread-300x200.jpg\" alt=\"pumpkin-bread\" width=\"300\" height=\"200\"><br \/>\nIngredients<br \/>\n\u2022 6 cups whole wheat flour<br \/>\n\u2022 1 tablespoon baking soda<br \/>\n\u2022 1 tablespoon baking powder<br \/>\n\u2022 2 teaspoons salt<br \/>\n\u2022 1 \u00bd tsp. cinnamon<br \/>\n\u2022 1 tsp. nutmeg<br \/>\n\u2022 \u00bd tsp. ground ginger<br \/>\n\u2022 \u00bd tsp. ground cloves<br \/>\n\u2022 5 eggs<br \/>\n\u2022 2 cups sugar<br \/>\n\u2022 1 \u00bd cups very ripe banana, mashed<br \/>\n\u2022 1 tbsp. vanilla extract<br \/>\n\u2022 2\/3 cup coconut oil<br \/>\n\u2022 1 1\/3 cups unsweetened almond milk<br \/>\n\u2022 2 cans pumpkin puree<br \/>\nDirections<br \/>\n1. Mix flour, baking soda, baking powder, salt, and spices in large bowl; set aside.<br \/>\n2. Beat eggs &amp; sugar on low until mixed, then on high for 30 seconds.<br \/>\n3. Add banana, vanilla, coconut oil, and almond milk. Blend for 30-60 seconds.<br \/>\n4. Add 2 cans pumpkin puree; mix until blended.<br \/>\n5. With mixer on low, slowly add flour mixture to wet ingredients. Blend until mixed well, but be sure not to over mix.<br \/>\n6. Grease loaf pans with coconut oil or grass-fed butter. Divide the batter into the four pans. Tap each one gently on a dish towel on the counter to remove air bubbles.<br \/>\n7. Bake at 350 degrees for 45-50 minutes, until knife or skewer inserted in the middle of the loaf comes out clean. Let cool on wire rack for 10 minutes, then remove from pan and let cool completely. Makes 4 loaves.<br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-15477\" src=\"\/blog\/wp-content\/uploads\/2015\/10\/blog-divider-line.jpg\" alt=\"blog-divider-line\" width=\"620\" height=\"60\" srcset=\"https:\/\/landing-uat.thedolcediet.com\/blog\/wp-content\/uploads\/2015\/10\/blog-divider-line.jpg 620w, https:\/\/landing-uat.thedolcediet.com\/blog\/wp-content\/uploads\/2015\/10\/blog-divider-line-300x29.jpg 300w\" sizes=\"auto, (max-width: 620px) 100vw, 620px\" \/><\/p>\n<h3>Butternut Squash Quinoa with Cranberries &amp; Walnuts<br \/>\nServes 4<\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-15546\" src=\"\/blog\/wp-content\/uploads\/2015\/11\/Butternut-Squash-Quinoa-Salad-293x440.jpg\" alt=\"Butternut-Squash-Quinoa-Salad\" width=\"293\" height=\"440\"><br \/>\n<i>Keep this in mind as a Thanksgiving side dish<\/i><br \/>\nIngredients<br \/>\n\u2022 1 medium butternut squash, diced<br \/>\n\u2022 1 large leaf of kale, stem removed<br \/>\n\u2022 \u00bd cup cranberries<br \/>\n\u2022 \u00bc cup walnuts, toasted<br \/>\n\u2022 \u00bc cup crumbled goat cheese or feta or blue cheese<br \/>\n\u2022 1 cup quinoa<br \/>\n\u2022 2 cup vegetable broth<br \/>\n\u2022 Grapeseed oil<br \/>\n\u2022 Salt and pepper<br \/>\nDirections<br \/>\n1. Cook quinoa according to package directions using vegetable broth instead of water to add flavor. Cool completely.<br \/>\n2. While quinoa is cooking, add a few drizzles of grapeseed oil to a saut\u00e9 pan and place over medium heat.<br \/>\n3. Add diced butternut squash and saut\u00e9 until tender, about 10-12 minutes. Remove from pan and let cool.<br \/>\n4. In the same saut\u00e9 pan add a little more grapeseed oil and kale. Wilt slightly, 1-2 minutes. Remove from pan and roughly chop. Set aside to also cool.<br \/>\n5. In the same pan, add walnuts. Toast for a few minutes on low heat but do not burn. Remove from pan and let cool.<br \/>\n6.
