Here are three delicious recipes that are sure to be a big hit when the family sits down for dinner. These healthy slow-cooker recipes also make for some delicious leftovers. Enjoy!<\/p>\n<h3>Slow Cooker Tex Mex Quinoa<\/h3>\n<p>Serves 6-8<br \/>\nIngredients<br \/>\n\u2022\t1 \u00bd cups quinoa, dry, well rinsed<br \/>\n\u2022\t1 can (15 ounces) black beans, drained and rinsed<br \/>\n\u2022\t1 can (14.5 ounces) diced tomatoes, with juice<br \/>\n\u2022\t1 cup sweet peppers, chopped<br \/>\n\u2022\t1 poblano chili pepper, chopped<br \/>\n\u2022\t\u00bd tsp. minced garlic<br \/>\n\u2022\t\u00bd cup yellow onion, chopped<br \/>\n\u2022\t2 tbsp. chili powder<br \/>\n\u2022\t1 \u00bd tsp. ground cumin<br \/>\n\u2022\t3 cups water<br \/>\n\u2022\t\u00bc cup cilantro, chopped<br \/>\n\u2022\t1 tbsp. fresh lime juice<br \/>\n\u2022\t2-4 tbsp. taco seasoning<br \/>\n\u2022\t1 \u00bd cups mozzarella cheese, shredded<br \/>\n\u2022\tOptional: green onions, salt and pepper to taste<br \/>\nDirections<br \/>\n1.\tPlace the washed quinoa, drained and rinsed black beans, and undrained diced tomatoes in the slow cooker.<br \/>\n2.\tChop the sweet peppers and poblano chili pepper (remove seeds if desired). Add the chopped peppers, minced garlic, and chopped onion to the slow cooker.<br \/>\n3.\tStir everything together. Add in the chili powder, ground cumin, and water.<br \/>\n4.\tStir again and cook for 3-4 hours on HIGH or until the water is completely absorbed and the quinoa is cooked through.<br \/>\n5.\tRemove from heat and stir in the chopped cilantro, fresh lime juice, taco seasoning to taste, and green onions if desired. Season with salt and pepper.<br \/>\n6.\tStir in the mozzarella cheese and enjoy immediately.<\/p>\n<h3>Slow Cooker Stuffed Peppers<\/h3>\n<p>Serves 5-6<br \/>\nIngredients<br \/>\n\u2022\t5-6 peppers with tops and middles removed<br \/>\n\u2022\t2 \u00bd cups cooked quinoa or brown rice<br \/>\n\u2022\t2 cups cashew cheese sauce<br \/>\n\u2022\t1 \u00bd cups cooked black beans<br \/>\n\u2022\t1 clove garlic minced<br \/>\n\u2022\t\u00bc cup onion diced<br \/>\n\u2022\t\u00bd tsp. chili powder<br \/>\n\u2022\tJuice from \u00bd a lime<br \/>\n\u2022\tsea salt to taste<br \/>\nDirections<br \/>\n1. Cut open the peppers from the top and carefully remove the stems and middles.<br \/>\n2. Mix all the other ingredients in a large bowl.<br \/>\n3. Put a small amount of water in the bottom of the large crock pot.<br \/>\n4. Place the peppers in upright.<br \/>\n5. Stuff the quinoa mixture into each pepper.<br \/>\n6. Turn slow cooker on HIGH and cook for about 3 hours.<\/p>\n<h3>Slow Cooker Shredded Beef<\/h3>\n<p>Serves 6-8<br \/>\nIngredients<br \/>\n\u2022\t1 pot roast<br \/>\n\u2022\t\u00bd yellow onion, sliced<br \/>\n\u2022\t\u00bc green pepper, sliced<br \/>\n\u2022\t\u00bc red pepper, sliced<br \/>\n\u2022\t1 \u00bd cups low-sodium beef broth<br \/>\n\u2022\t1 tbsp. chili powder<br \/>\n\u2022\t2 tsp. onion powder<br \/>\n\u2022\t1 tsp. ground cumin<br \/>\n\u2022\t1 tsp. garlic powder<br \/>\n\u2022\t1 tsp. paprika<br \/>\n\u2022\t1 tsp. ground oregano<br \/>\nOR<br \/>\n\u2022\t1 packet low-sodium taco seasoning<br \/>\nDirections<br \/>\n1. Combine all ingredients and cook on LOW for 8 hours.<br \/>\n2.
